The Time Warner Center restaurants continue on their rocky road as Café Gray reduced its payroll. The food court to end all food courts lost some luster when Jean-Georges’s V Steakhouse didn’t work out and Charlie Trotter trotted away without ever opening. Now an industry source says owner-chef Gray Kunz cut back on costs just before the holidays—and did so by whittling down his staff’s paychecks. Kunz spokesperson Stephanie Faison confirmed that wages had been reduced but said Kunz’s underlings weren’t the only ones taking a hit. “This was a standard adjustment,’’ she said. “The labor cost was far too high. Gray actually took the largest cut.’’
